Meet Our Owners
Tom Schaudel, Partner at aMano, boasts upwards of 50 years of experience in the restaurant industry. A graduate of the Culinary Institute of America, Chef Tom Schaudel has been an influential restaurateur starting with his first restaurant, Panama Hatties [Huntington Station], in 1982. Since then, Schaudel has opened many of Long Island’s most successful restaurants, including Angelfish [Long Beach], Thom Thom [Wantagh], Lemongrass [Roslyn], Coolfish [Syosset], 107 Forest Avenue [Locust Valley], Rockfish [Huntington], Jedediah Hawkins [Jamesport], PassionFish [Westhampton Beach], Spring Close House [East Hampton], Downtown Grille & Wine Bar [Montauk], Petulant Wino [Aquebogue], and Jewel [Melville] & Be Ju Sashimi Bar [Melville]. Tom is currently the chef and owner of A Lure Chowder House & Oyster-ia[Southold], a Mano [Mattituck], and By Hand Catering chef and menu designer [Mattituck]. Tom has also authored the book Playing with Fire
Adam Lovett, Partner at aMano with 30 years of experience in the hospitality industry, has owned and operated a litany of restaurants from Manhattan to Southold. Adam got his start in the city at Arizona 206 [Manhattan] and Contrapunto[Manhattan] and managed P.J. Clarks [Manhattan]. He also managed Starr Boggs [Westhampton Beach], Tequila Jacks [Fire Island], and Jedediah Hawkins [Jamesport] and owned and operated Vespa [Manhattan] and Passion Fish [Westhampton Beach]. He has also worked as a sommelier, sold wine, and curated winelists for some of the top restaurants on Long Island. Adam currently owns and operates a Mano [Mattituck], A Lure Chowder House & Oyster-ia [Southold], Southold Social [Southold], and By Hand Catering Catering and Events [Mattituck].
